pumpkin pancakes
Pancakes, fritters
- 200 g pumpkin (mashed)
- 2 chicken eggs
- 2 tbsp. about flour
- 100 g sugar
- 40 g butter
- 1 st. milk
- 1 tsp baking powder
- a pinch of salt
- a little honey (for serving)
Recipe for pumpkin pancakes
1. Cooking pumpkin puree: pumpkin needs to be washed well, peeled and pitted, cut into pieces - bake until soft (up to 200 °). Then, using a blender, grind the baked pieces of pumpkin until smooth.
2. Next, beat the eggs with sugar (it is better to add sugar to taste, since the pumpkin can already be so sweet). Salt a little.
3. In a bowl, mix beaten eggs and pumpkin puree, add melted butter there. Whisk everything together well. Add milk. Pour the flour (it is better to sift and mix with the baking powder beforehand). Whip it all up again.
4. The finished dough (step 3) should be thicker than for ordinary pancakes and thinner than for pancakes.
5. Fry in a hot pan.
Pancakes should be fried in a dry non-stick pan so they cook quickly and flip easily.
Before serving, you can pour honey or your favorite jam.
