Ingredients
  • Zucchini or young zucchini - 1 pc.
  • Egg - 3 pcs.
  • Carrot - 1 pc.
  • Flour - 2 tbsp. spoons
  • Greens, ground pepper and salt
  • Garlic - 1 clove
  • Vegetable oil for frying
Zucchini pancakes are delicious and easy to make and are so unique that they can be served for breakfast, lunch and dinner. To add originality to the dish, you can add greens, grated carrots and garlic to the dough.

Wash the greens, dry and finely chop, finely chop the peeled garlic. In a separate bowl, beat the eggs, pepper, add chopped herbs and garlic. Grate peeled zucchini and carrots. Add the zucchini and carrots to the egg mixture and stir, add the flour and mix again. The zucchini mass must be salted only before cooking, so that the zucchini does not release a lot of juice.

On the heated vegetable oil and spread the squash mass with a spoon, fry over low heat for 2 minutes on both sides.

Put the finished pancakes on paper towels in order to remove excess oil and spread on a dish. Sour cream or kefir is ideal for hot pancakes.
