Fried Cajun catfish

Ingredients
- 1 som weighing up to 2 kg
- big lemon juice
- vegetable or ghee
- For the Cajun Breading:
- 1 cup flour
- 2/3 cup fine corn grits
- 2 tbsp. l. baking powder
- 2 tbsp. l. garlic powder
- 1.5 st. l. dried thyme
- 1 tsp (1 tbsp) cayenne pepper
- 1 st. l. freshly ground black pepper
- 1.5 st. l. medium ground sea salt
To garnish catfish, mix corn and green peas, saute onions and bell peppers with Cajun spice mix and quickly simmer first in white wine, then add heavy cream.
Cajun fried catfish recipe

1. Fillet the catfish. Cut the fillet into medium-sized portions, pour over them with lemon juice and let them rest for 10-15 minutes.

2. Meanwhile, in a large bowl, thoroughly mix all the ingredients for the cajun breading, adding the cayenne pepper to taste.

3. Dry the pieces of catfish with paper towels and put in the breading. Roll thoroughly, pressing the breading into the pulp with your fingers.

4. Heat the oil in a large heavy-bottomed frying pan to a layer of about 1 cm. When the oil begins to smoke slightly, put the pieces in the pan and fry until brown. Serve immediately.
