Spinach Pesto Casserole
Ingredients
  • 250 g low-fat cottage cheese
  • 2 eggs
  • 2 tbsp flour
  • 2 tbsp ready-made pesto
  • 2 tbsp grated parmesan cheese
  • 1 large bunch fresh spinach
  • salt, pepper to taste
  • 1 tsp lemon juice
We continue the series of recipes for casseroles, this time we will prepare a casserole with spinach and pesto sauce.

1. Lubricate portioned baking molds with oil and sprinkle lightly with flour.

2. Wash spinach thoroughly, cut off hard cuttings. Blanch the leaves for 2 minutes. Cut into thin strips.

3. Whisk eggs with salt, pepper, lemon juice and pesto. Enter cottage cheese. Mix. Add flour and mix thoroughly again.

4. Add chopped spinach, mix and put into prepared molds. Sprinkle with shredded parmesan cheese.

5. Bake in an oven preheated to 180°C for 20-25 minutes.
