Tomato velouté with almonds
Second courses
- Onion - 1 small head
- Tomatoes - 500 grams
- Olive oil - 2 tbsp.
- Sugar - 1 tbsp.
- Pepper
- Salt
- Sour cream - 4 tbsp.
- Shelled almonds - 1 handful
Tomato almond velouté recipe
We wash the tomatoes under cold water, tear off the stalks. We make small cuts crosswise on top. Scald the tomatoes with boiling water and quickly pour over with cold water. Remove the skin and cut the tomatoes into 4 pieces. We remove the seeds from the fruit, and chop coarsely enough.
We clean the onion and finely chop it, after which we heat the pan with oil and pass the onion on it. Then add chopped tomatoes, pepper, salt, sugar, pour 1 cup of boiling water and cook for 15 minutes.
In the meantime, you can make caramelized almonds, by the way, did you know that almonds are very healthy? Find out what the benefits of almonds are and eat them as often as possible. And so, back to cooking, pour sugar into a saucepan, pour 1 tablespoon of water into it and dissolve sugar over low heat. After about 5 minutes, the sugar will turn brownish, which means it's time to add the almonds. We mix almonds well with caramel, after which we take a metal tray or any dish, grease it with oil and pour our caramel. Let the caramel harden and cut it into pieces with a knife.
Ready tomatoes must be crushed and rubbed through a sieve. Add 2 tbsp to the mashed tomatoes. sour cream and mix everything.
Pour the resulting mixture into cups and decorate everything with chopped caramelized almonds and sour cream.
