Peking Duck
Ingredients
  • 2-3 kg fat, meaty duck
  • 1 st. l. ginger powder
  • 1 st. l. sesame oil
  • 5 st. l. soy sauce
  • sherry 1- tbsp. l.
  • coarse salt
  • 1 glass of water
  • 1 st. l. black freshly ground pepper
  • 4 tbsp. l. honey
  • One egg
  • green onion
  • 1 cup flour
  • 2 tbsp. l. vegetable oil
  • 2/3 cup milk
  • 1 glass of water
Peking duck is one of the famous Chinese dishes. The dish is a baked duck rubbed with honey. It is customary to serve the finished dish by cutting the meat into thin slices, the skin should turn out crispy, thin and not greasy, flatbreads or pancakes and sauce are also served with duck. You can also serve cucumbers cut into strips with the duck.

Before cooking, the duck should be thawed, first it should be pulled out of the freezer into the refrigerator for a day, and then for another 10-12 hours at room temperature.

After the duck is completely defrosted, it should be washed well under cold running water (if there is a hairline, then remove it). Cut off the upper phalanges of the wings with a sharp knife.

Cut off excess fat from the duck, most of which is located in the neck and tail.

Having boiled the kettle, hang the duck on a hook or fork and pour boiling water over all sides.

After the water drains, wipe the duck with a dry towel.

Take the sherry and rub the duck well from all sides, as well as from the inside and let it lie down at room temperature for 10-15 minutes.

Next, rub the duck with salt, then take a glass, insert it into the duck and put it on a dish. After that, put the duck in the refrigerator for 12 hours, periodically you need to pour the liquid from the dish.

After 12 hours have passed, you should smear the duck with honey, try to apply a small even layer and put the duck back in the refrigerator for 12 hours.

Pour water into a baking sheet and heat the oven to 190 degrees, put the duck breast side up on the grate.

Putting the wire rack on a baking sheet, wrap everything in foil and put in the oven to bake for 60-70 minutes.

Put sesame oil, ginger, soy sauce, pepper in a small container and mix well.

Next, you need to pull out the baking sheet with the duck, remove the foil and the baking sheet with the liquid, and grease the duck with the mass that came from the ginger, sesame oil, soy sauce and pepper.

Place the duck on the grill back into the oven and bake at 260 degrees for about 30 minutes (if the duck suddenly burns, you should reduce the temperature, while increasing the baking time).

Having combined honey and soy sauce, pull out the duck and grease it with this and bake the bird in the grill mode for another 10 minutes.

In order to cook pancakes, you need to mix flour with water, beat in an egg and add milk, add butter and pre-cut green onions, mix the resulting mass. Preheat a Teflon pan and, without adding oil, bake thin pancakes.
