Curd cake with strawberries
Ingredients
  • 6 chicken eggs
  • 200 grams of butter
  • 1 kilogram of cottage cheese with a fat content of 5-9%
  • 400 grams of sugar
  • 150 grams of semolina
  • 50 grams of powdered sugar
  • 300 grams of strawberries
  • 150 ml cream (30%)
The recipe for cottage cheese cake with strawberries came to us from Portuguese cuisine. This cake turns out to be quite interesting and tasty, with a delicate strawberry flavor. In this recipe, it is best to use fresh strawberries, but if it's not in season, then don't be discouraged, frozen strawberries are also suitable.

Separate the yolks from the whites. Set the whites aside and mix the yolks with butter and sugar. Butter should be warmed up to room temperature.

Add cottage cheese and mix everything to get a homogeneous mass. If in your case lumpy or dry cottage cheese has come across, then it can be passed through a sieve. However, this procedure is not so important, sometimes it turns out tastier when you feel the texture of baking.

We heat the pan and heat the semolina on it so that its color becomes golden. Add the finished cereal to the curd dough.

We take the reserved proteins and beat them into foam, adding 1 pinch of salt.

Gently fold the resulting thick foam into the dough.

We divide the resulting dough into 2 parts and bake 2 cakes from them. The oven must be at a temperature of 180 degrees for 45-50 minutes. We cool the finished cakes.

While the cakes are being prepared, you can make cream for the cake. We make puree from strawberries, leaving a few berries for decoration. Mix the chilled cream together with powdered sugar, add strawberry puree there and mix everything well.

We grease the first cake with half of the strawberry cream, put the second cake on it and also grease it with the rest of the cream. Top everything with chopped strawberries.
