- 4 eggs
- 10 ml olive oil
- Salt
- 500 g peeled pumpkin
- 25 g amaretto cookies
- 60 g parmesan cheese
- Sage

Tortelloni with pumpkin is a traditional dish of the Italian region of Emilia-Romagna. A wonderful combination of the natural sweetness of pumpkin and the delicate aroma of amaretto liqueur creates a unique combination of flavors. This light dish is great to start your dinner. Recipe for tortelloni with pumpkin puree and cookies

Mix eggs with salt, add olive oil, mix well.

Carefully add flour, knead the dough.
