Ingredients

  • 400 gr. dark chocolate
  • 200 gr. butter
  • 50 gr. hazelnuts
  • 8 chicken eggs
  • 150 gr. brown sugar
  • 100 gr. granulated sugar
  • 200 ml. cream
  • 200 gr. dark chocolate

Melt the butter in a suitable bowl, then send the chocolate to it, mix everything thoroughly until the chocolate is completely dissolved. Set aside for this to cool down.

Separate the yolks and whites. Beat the yolks thoroughly until airy foam forms. Beat the whites separately, beat until they turn into a dense white mass that holds its shape.

Enter the yolk foam into the cooled creamy chocolate mass and add the almond flour. Stir, and then very carefully and gradually introduce the protein mass. Next, prepare a baking dish, it is better if it is a special detachable form, grease it with oil, and sprinkle with flour, pour the resulting dough into it, and send the baking cake to the oven heated to 170 degrees. After 35 minutes, remove the cake, although it may still be soft in the middle. Let it cool completely.
