Tagliatelle with pepper, mozzarella and mint
Ingredients
  • 400 g tagliatelle
  • 150 g mozzarella
  • 3 small colorful sweet peppers
  • 3 garlic cloves
  • 5 sprigs of mint
  • olive oil
  • 0.5 tsp ground paprika
  • salt
Colorful, tasty, very simple dish. And useful! The perfect vegetarian lunch or dinner. If you want to please a meat-eater, just add ham (adhering to the principles of a healthy diet - dry-cured).

Recipe for tagliatelle with pepper, mozzarella and mint

1. Cut the peppers in half lengthwise, remove the core. Using a vegetable peeler, cut the flesh into thin, lengthwise strips. Chop the garlic. Finely chop the mint leaves.

2. Boil water in a large saucepan, season with salt, paprika and tagliatelle, cook according to package directions.

3. While the pasta is cooking, chop the mozzarella. In a large skillet, heat the oil, add the pepper and garlic, fry over high heat, stirring, about 5 minutes. The peppers should stay crisp.

4. Drain the pasta in a colander, immediately transfer to the peppers, season with mint, salt and pepper. Stir, arrange on plates, sprinkle with mozzarella.
