Thai Chicken Noodle Soup with Coconut Milk
Ingredients
  • 15 gr. fresh ginger
  • ½ part chili pepper
  • 50 gr. green peas
  • 100 gr. boiled chicken (from broth)
  • 150 gr. udon noodles
  • 3 tbsp vegetable oil for frying
  • 50 gr. spinach or pak choy
  • ½ tsp tom yum pasta
  • 1 liter chicken broth
  • 4 tbsp coke milk
  • 5 tbsp soy sauce
  • 1 tbsp sesame oil
  • Salt - to taste

Finely chop the ginger, cut the chili pepper into rings, and cut the chicken into small pieces. Cut the peas in half.

Boil the noodles in boiling salted water until tender, following package instructions.

Meanwhile, place a deep saucepan over high heat and heat well. Pour in the vegetable oil and fry the ginger and chili in it for about 10-15 seconds.

Add chicken, peas, spinach (or pak choi). Fry, stirring, 1 minute. Add tom yum paste, hot chicken broth and bring to a boil. Add coconut milk, soy sauce and sesame oil.

Add salt to taste, put the noodles into the soup, mix and serve.
