Pork chops in a spicy marinade

- 2 limes
- 50 gr. parsley
- 5 cm fresh ginger
- 1 tsp salt
- 700 gr. pork loin
- 1 chili pepper
- 5 garlic cloves
- 100 ml olive oil
- ½ tsp ground black pepper
Recipe for pork chops in a spicy marinade
Remove the zest from the limes, cut the garlic into thin plates, just finely chop the parsley.
Pass the ginger root through a fine grater. Try not to get any fibers.
Cut the chile pepper and remove the seeds, then cut it into strips.
Now thoroughly rub the garlic, zest, ginger, pepper and parsley in a mortar.
When the marinade ingredients are well blended, add lime juice, salt, olive oil and pepper, then mix everything.
Now start cooking the meat. Cut the loin into 4 pieces. Rub the marinade over the meat pieces and marinate them for 30-40 minutes.
Heat up a frying pan with vegetable oil. Clean the pork pieces from large pieces of marinade and fry them on both sides until a piquant golden crust forms.
Transfer the meat to a baking dish, pour over the rest of the marinade and put it in the oven for 20 minutes.
