Pork in sweet and sour sauce
Ingredients
  • Pork (pulp) - 300 g
  • Starch - 50 g
  • Sugar -25 g
  • Soy sauce -5 g
  • Ketchup - 20 g
  • Vinegar - 5 g
  • Vegetable oil for frying
In Chinese, this dish is called "guo bao rou." It is cooked basically the same way, it can differ only in the size of the pieces of meat and the degree of roasting. In the Heihe Chinese cuisine cafe, pork is cooked the way we show. We would like to thank Nikolai Khalyavin, director of the cafe, for his help in organizing the shooting.

Sweet and sour pork recipe

Pork cut into thin slices of 7-10 g.

Prepare batter. To do this, dilute the starch with a small amount of water to the consistency of thick sour cream. Place the meat in this mixture, carefully rolling on all sides.

In a deep frying pan (preferably in a wok), heat the vegetable oil to a high temperature. Fry the meat in deep fat over high heat until golden brown (3-5 minutes). When frying, make sure that the pieces of meat do not stick together.

In another wok, heat a mixture of soy sauce, ketchup, sugar and vinegar. Remove the meat from the fryer with a slotted spoon and place in this mixture. Mix quickly and put on a dish.

This Chinese dish is not easy to prepare at home. The difficulty is that on a conventional stove, especially an electric one, it is almost impossible to achieve such a high temperature as required. It can only be cooked on an open fire.
