The beetroot recipe is somewhat reminiscent of okroshka, as it is prepared from pre-boiled vegetables, and is also served cold. Beetroot includes a wide variety of summer vegetables, as well as greens.

First of all, we wash all the greens and vegetables.

Boil the whole beets for 30-40 minutes. It is necessary to cook beets with a slightly ajar lid so that the unpleasant smell disappears.

We also boil chicken eggs and potatoes in their skins.

A decoction of beets must be filtered through gauze (preferably several times), after which it must be cooled. If you have meat broth on hand, you can use it instead of beetroot broth.

We cool the boiled products, after which we clean them.

We cut everything finely enough and mix potatoes, beets, herbs and cucumbers in a separate saucepan, add salt to taste, then pour beetroot broth, add lemon juice and sour cream.

We mix the beetroot and put it in the refrigerator for 30 minutes.
