Soup with lentils
Ingredients
  • 250 gr. green lentils
  • 15 ml olive oil
  • 1 tsp oregano
  • 400 gr. tomatoes in their own juice
  • 200 gr. carrots
  • 2 bay leaves
  • 120 gr. green string beans
  • 100 gr. onion
  • 1 tsp ground paprika
  • 2 liters vegetable broth
  • 50 gr. tomato paste
  • 150 gr. stem celery
  • 300 gr. zucchini

Soak the lentils for 2 hours in cold water, then rinse and let it flow a little.

We clean and cut the onion. We heat the pan, add 1 tablespoon of oil there and pass the chopped onion until it becomes soft. Add oregano and paprika to the onion, then continue to cook for about 1 minute.

Add the lentils to the pot with the onions. Pour in the broth and add the tomatoes to the juice. We bring all this consistency to a boil, after which we slightly reduce the heat and continue to slowly boil for another 5 minutes.

Cut the carrots into rings, and cut the celery across.

Pour chopped celery and carrots into a saucepan, also add bay leaf and mix everything. Bring to a boil again, cover the pan with a lid and continue to boil slowly for 40 minutes.

We cut the zucchini, the beans can also be chopped a little.

Add chopped beans and zucchini, and let the lentil soup cook for another 10-15 minutes.
