Chicken and Cucumber Soup
Ingredients
  • 1 chicken fillet
  • Flour - 1 tsp
  • Cucumbers - 8 pcs. medium size
  • Egg yolks - 2 pcs.
  • Cream - 1.5 cups
  • Butter
  • Black pepper
A delicious chicken and cucumber puree soup is perfect for a summer menu.

First of all, boil the chicken fillet, remove the meat from the pan, and set the broth aside.

We clean the cucumbers, then cut them into circles and put them in a thick-bottomed pan. Add 1 tsp. butter and a small amount of chicken broth. Close the pan with a lid and simmer the cucumbers until soft.

Grind the butter with flour, then dilute in a small amount of broth and add to the cucumbers. We let the cucumbers boil 3 times, after which we let them simmer for another 10 minutes.

Now transfer the contents of the pan to a blender and grind. Add chicken broth to the cucumber mass, bring the puree soup to a boil and remove from heat.

Beat the chicken yolks together with the cream and season our soup with this mixture, then add the chopped chicken fillet, pepper and salt.
