- A piece of butter
- 2 onions
- 1 garlic clove
- 600 g broccoli
- 750 ml milk
- 250 ml low fat cream
- 100 g blue cheese (dorblu, gorgonzola)
- Green onion for garnish
- Salt
- Pepper

Broccoli Blue Cheese Soup Recipe

Chop the onion and garlic.

Heat the butter in a large saucepan and cook the onion until soft, then add the garlic and cook for another minute. Add broken broccoli and milk. Simmer for 20 minutes. Then puree with a blender.

Heat soup again, add cream, finely chopped cheese, salt and pepper. At a temperature close to boiling, keep the soup on fire until the cheese is melted. Sprinkle with chopped green onions and serve.
