- 200 gr. white beans
- 1 leek
- 2 celery stalks
- 2 carrots
- 2 onions
- 2-3 bay leaves
- 1 garlic clove
- 4 tbsp olive oil
- 2 tbsp finely chopped parsley
- Rosemary - 1 pinch
- Sea salt - to taste

Soak the beans in boiling water for 8 hours (you can overnight). After the time has passed, rinse the beans in cold water.
Now fill the beans with water, and bring to a boil. Please note that the water should be twice as much as the beans.
Drain the water from the beans and rinse it, then pour cold water again. Add some oil and bring the liquid back to a boil.
When the beans boil, add a few bay leaves, a carrot, a stalk of celery, and a whole onion.
Continue to simmer for 600 minutes, then remove the vegetables and bay leaf from the soup.
Heat the oil in a thick-bottomed pan and fry the minced garlic and onion, salt and add rosemary.
Cut raw carrots and celery into cubes. Saute vegetables for 3 minutes.
Add thinly sliced onion to the beans, season with salt and continue cooking for another 10 minutes.
Remove soup from heat and sprinkle with parsley.
