Ingredients
  • 700 gr. beef on the bone
  • 200 gr. smoked loin
  • 200 gr. smoked brisket
  • 300 gr. smoked pork ribs
  • 250 gr. peas
  • 250 gr. potatoes
  • 100 gr. carrots
  • 50 gr. onion
  • 30 gr. orange bell pepper
  • 300 gr. wheat bread
  • 50 ml. olive oil
  • 20 gr. garlic
  • Salt to taste
  • Parsley greens to taste

To prepare pea soup, it is advisable to leave the peas in water overnight. If this did not work out, then soak it, at least for 2 hours.

While the peas are resting in the water, it is necessary to prepare the broth. Prepare the meat by washing it thoroughly, put it in the saucepan in which you plan to cook the soup, fill the meat with cold water and send it to the stove. After boiling, boil the meat for several minutes, then remove the meat from the pan, drain the water, and wash the pan. Next, return the meat to the pan, fill with new water and send to cook again. After the broth boils, send a whole peeled onion and a whole carrot to the pan. Continue to cook the meat until it is fully cooked. For beef, this is at least 2.5 hours. The total volume of the broth should be 2.5 liters, control the evaporation of the liquid, if necessary, water can be added during cooking.

After completing the preparation of the broth, remove the onions and carrots from it, and send the peas to the pan. You need to cook further for at least one hour. Next, send the potatoes cut into medium slices into the pan and cook for another 15 minutes. Cut the loin into small squares, divide the ribs into slices along the bone, and send the smoked meats to the soup. The brisket should be cut into thin strips and fried in a small amount of oil, add finely chopped onions, bell peppers and carrots to the brisket, fry everything over low heat. Next, send the roast to the pan, add salt and set aside from the heat.

As well as possible, croutons are suitable for such a soup. Cooking them is not difficult, fry slices of bread in olive oil in a pan, then move them to a baking sheet and bake in the oven until golden brown. Serve the finished soup with crackers and parsley.
