Spaghetti with eggplant and tomatoes
Second courses
- 1 head of onion
- 200 gr. eggplant
- 200 gr. red tomatoes
- 25 gr. butter
- 15 gr. olive oil
- 500 gr. spaghetti or other long pasta
- 2 garlic cloves
Recipe for Spaghetti with Eggplant and Tomatoes
Clean and chop the onion.
Cook the onions over low heat with the addition of one tablespoon of olive oil. Cook for about 5 minutes until the onion is translucent and soft.
In the meantime, that the onion is fried, boil water.
Cut the eggplant into thin slices. We send them to the pan with onions and add a little salt. Cooking for 3-4 minutes.
Now take the pasta and put it in boiling water. Cooking should be based on the pasta you have taken. Usually the cooking process takes no more than 7 minutes, but it can be longer, take a look at the instructions written on the pasta package.
Chop the tomatoes and add them to the eggplant and onion. We also chop the garlic cloves finely and also send them to the pan. At this stage, you can add some herbs to the sauce, such as thyme or parsley leaves.
Drain the cooked pasta in a colander, reserving a small amount of water.
Add the butter to the sauce, remove it from the heat and mix with the pasta.
