chimichurri sauce
Ingredients
  • Parsley - 25 g
  • Cayenne pepper - 1/2 teaspoon
  • Garlic - 2 cloves
  • Ground paprika - 1/2 teaspoon
  • Dried oregano - 1 teaspoon
  • dried thyme - 1 pinch
  • Bay leaf powder - 1 teaspoon
  • Ground cinnamon - 1 pinch
  • Jalapeno or chili pepper - 1 piece
  • Ground nutmeg - 1 teaspoon
  • Dry white wine - 100 ml
  • Freshly ground black pepper - 1 pinch
  • Lemons - 1 piece
  • Onion - 1/2 head
  • Extra virgin olive oil - 100 ml
  • Tomatoes - 2 pieces
  • Green pepper - 1/2 piece

We put all the spices in a mortar and add very finely chopped parsley, jalapeno and garlic.

Squeeze the juice of half a lemon into it.

Very diligently chop to a mushy state.

All this can be done with a blender, but without getting carried away.

In a separate bowl, mix the resulting mixture with oil and wine.

Mix well.

Add capsicum and finely chopped onion.

We clean the tomatoes from the peel and seeds.

Cut into small cubes.

Mix with sauce.

Let it brew for a couple of hours in the refrigerator.
