Snitnye cabbage soup
Ingredients
  • 100 g top young nettle leaves
  • 100 g top young leaves of goutweed (or spinach)
  • 1 medium bunch green onions
  • 1 large onion
  • 4-5 art. l. buckwheat (you can cut or core)
  • 3 art. l. butter or sunflower oil
  • Rustic rye bread and sour cream for serving
  • Salt
Snitnye shchi is a recipe of the Chuvash folk cuisine, which, unfortunately, is not very common in our area. Shchi turns out to be very tasty, with a certain "zest", which you will learn about by preparing them at home.

Recipe for making snitny cabbage soup

Soak the buckwheat in plenty of warm water while you cook everything else. Peel and cut the onion as small as possible. Cut off the white part of the green onion and chop finely.

Rinse all other greens, including green onions, thoroughly with cold water, put in a heat-resistant colander, pour over with boiling water, squeeze and chop.

Heat the oil in a saucepan, add the onion and the white part of the green, fry lightly until translucent, 3 minutes. Add buckwheat, pour in 1 liter of water, bring to a boil, cook for 10 minutes. Pour all the greens, cook buckwheat until soft, 10 minutes. Season with salt and serve with bread and sour cream.
