Tomato flaky appetizer with goat cheese basil mousse
Ingredients
  • 1 red tomato (preferably oxheart)
  • 2 green tomatoes
  • 100 g dried tomatoes
  • 250 ml cream
  • 150 g soft goat cheese
  • 2 sprigs of basil
  • Salt
  • Pepper
A puff tomato appetizer is very beautiful, perfect for decorating a festive table. Cooking time is 10 minutes and 1 hour cooling.

Heat the cream, add the cheese and, stirring, dissolve it until a homogeneous mass is obtained. Salt the mass, remove from heat, let cool completely and place in the refrigerator for 1 hour.

Wash fresh tomatoes, dry, cut into circles and arrange on portioned plates, alternating in color. Add sundried tomatoes.

Pour the cooled mass into the siphon. Shake the siphon and spread the cream cheese mousse on plates. Pepper and garnish with basil leaves.
