Recipe for strudel with cherries and almonds
Let's make the dough first. Sift flour into a bowl, pour water, salt and add sunflower oil. We mix everything, and then grease the dough with sunflower oil, wrap it with cling film and put it in a warm place for 1 hour.
The filling is prepared as follows. Mix cherries with sugar. We put the pan with fruits and sugar on a slow fire, bring to a boil and leave to boil for 5 minutes. Then remove the cherry from the heat and let it cool down. When the pan has cooled down, put the cherries in a colander.
Roast the almonds in a frying pan and grind them in a blender. shortbread cookies also need to be crushed in a blender. Mix almonds with nuts.
Spread a clean towel on the table, sprinkle with flour and put the dough on it. Sprinkle the top of the dough with flour as well. Roll out the dough not very thin. Then we stretch it gently so that a towel can be seen through the dough, and the dough should not be damaged. If, nevertheless, the dough breaks, then we close this place with pieces from the edge.
Cut off the thick edge of the pastry with a sharp knife. Lubricate it with a brush of butter. From one edge we leave 7-10 cm of dough for folding the strudel, from the other edges we retreat 3-5 cm and sprinkle the rest with ground cookies and nuts. After that, spread the cherries and sprinkle everything with sugar.
We turn the roll, helping with a towel, and fill the edges of the roll inside - so the filling does not leak out. We cover the baking sheet with parchment and grease its surface with butter, then put the roll on it.
We preheat the oven to 180 ° C, place the roll there and bake for 30 minutes. The strudel is served warm, cut into portions and sprinkled with sugar. Can be served with a scoop of ice cream.
