Salad with beef
Salads
- 300 grams beef tenderloin
- 50 ml table vinegar
- ½ teaspoon ground black pepper
- 50 grams pitted olives
- 1 teaspoon Dijon mustard
- 50 ml olive oil
- 4 chicken eggs
- 80 grams of arugula
- 10 ml lemon juice
- 200 grams of cherry tomatoes
- ½ teaspoon salt
- 5 grams of honey

First of all, you need to boil hard-boiled chicken eggs.
Take the meat, salt and pepper it to your taste. Heat a frying pan without oil and sear the beef until browned, about 2 minutes on each side.
After frying, cover the meat with foil and put in a warm place so that the meat is steamed evenly. Please note that the meat should remain juicy and pink inside. The frying time may be different, it all depends on the thickness of your piece, as well as the power of your stove, be guided by your culinary skills.
Now we take onions and chop them thinly enough, then pour 200 grams of water and add 3 tablespoons of vinegar. Leave the onions to marinate for 15 minutes.
Rinse and dry the arugula, then arrange on plates, lay the eggs cut into pieces on top of the arugula (see photo).
Cut the beef into thin slices, and put it on top of the arugula.
We take out the onion from the marinade and let it flow around, now we spread it on top of the beef.
Cut the cherry tomatoes into 2 parts and decorate the salad, you can also decorate with olives.
Now you need to make a salad dressing, for this we mix olive oil, Dijon mustard, lemon juice, honey, ground black pepper and lemon juice. Mix all the ingredients and pour over the salad with the resulting dressing.
