Turkey rolls with cheese and dried apricots

- 600 g turkey fillet
- 100 g Folle Epi cheese
- 60-70 g sweet and sour dried apricots
- 100 ml dry white wine
- olive oil
- 0.5 tsp dried basil
- 0.5 tsp ground paprika
- salt
- freshly ground black pepper
- green mixed salad for serving
Recipe for turkey rolls with cheese and dried apricots
1. Cut the turkey fillet into 4 flat pieces. Place them between two pieces of film folded in several layers and beat them with a pestle or rolling pin to a thickness of 6-7 mm. Season with basil, paprika, salt and pepper, brush with oil and let stand 30 minutes. 2.
Pour the boiled white wine over the dried apricots. Let stand 30 minutes, then dry the dried apricots and cut into small cubes.
3. Cut the cheese into thin long slices. Set aside 4 slices. Put cheese slices on each piece of turkey fillet, dried apricots in the center.
4. Roll each structure into a roll and secure with a toothpick. Put the rolls in a baking dish and place in the oven for 10 minutes. Then lay a piece of cheese on each roll and bake until the cheese is golden brown. Serve immediately with a green salad.
