Eggplant and ham rolls with cottage cheese filling

Ingredients
- 1 large eggplant
- 250 g soft cottage cheese (1% fat)
- 125 g mozzarella
- 100 g ham, cut into thin slices
- 1/2 tomato
- small bunch of tarragon
- small bunch of basil
- 1/2 garlic clove
- 1 st. l. olive oil
- a pinch of dry marjoram
- 1/4 tsp freshly ground black pepper
- 1/4 tsp sea salt
Delicious and unusual tasting ham and eggplant rolls.
Recipe for eggplant and ham rolls with curd filling

1. Cut the eggplant along the entire length into thin slices and fry them on the grill on both sides.

2. Finely chop the tarragon.

3. Peel the garlic, crush with the flat side of the knife and chop.

4. Combine cottage cheese with marjoram, tarragon, garlic, salt, pepper and mix.

5. Cut the mozzarella into cubes and combine with the curd mass.

6. Cut the tomato into small cubes, salt, pepper, drizzle with olive oil and mix.

7. Chop the basil leaves.

8. Place an eggplant slice on each slice of ham, and the curd filling on top. Gently roll up the rolls and serve with tomato sauce and chopped basil.
