Chopped meatballs with young green pea sauce
Ingredients
  • 2 chopped onions
  • 400 g minced meat assorted
  • 3 slices of bread
  •  4 tablespoons of milk
  • 1 egg
  • 1 clove minced garlic
  • ground black pepper
  • 4 tbsp. tablespoons chopped parsley
  • flour
  • vegetable oil
  • 500 g green peas
  • 2 tbsp. butter spoons
  • 400 ml stock
  • salt
  • ground pepper
  • 150 ml cream

Recipe for Chopped Cutlets with Young Green Pea Sauce

1. For cutlets, fry half the onion for 1 table, a spoonful of vegetable oil. Soak the bread in milk, squeeze, mix with minced meat, onion and garlic, add 1 table, a spoonful of parsley and an egg, season.

2. Form cutlets into peas, roll in flour and fry in vegetable oil until tender.

3. For the sauce, blanch the peas in boiling salted water for 3 minutes. Fry the remaining onion in butter, sprinkling it with 1 table, a spoonful of flour.

4. Pour in the broth and cook for 20 minutes. Add 400 g of peas and the remaining parsley.

5. Puree, pour in the cream, season to taste and add the remaining peas. Serve patties with sauce.
