Vichyssoise french soup recipe

- 150 ml cream
- A few green onions
- 30 gr. butter
- 2 tbsp olive oil
- 1 lightly salted herring
- 500 gr. potatoes
- 500 gr. leek
- Pepper
- Salt
French Vichyssoise Soup Recipe
At the beginning, clean and cut the herring into small pieces. Then, take a potato, peel it from the skin and cut it into neat cubes. We put the potatoes in a bowl of water and leave it like that for 30 minutes. Cut the leek into rings, but only the white part of it, put the green part aside, it will still come in handy at the very end.
The next step is to melt the olive oil and butter in the already prepared container and put the onion there, simmer it until it becomes transparent.
Now you can add potatoes, all this should be stewed, no more than a couple of minutes, do not forget to stir. Pour boiling water into the pan, the liquid should completely cover the vegetables. Cook until the potatoes are fully cooked.
After that, it is recommended to cool the resulting soup, and beat it in a blender, at the end you need to add cream.
Serve the soup chilled, pieces of herring can be placed in the center of the plate, and sprinkle with green onions on top.
