Plum and chocolate petit fours
Ingredients
  • 1 kg plums
  • 80-100 g butter
  • 100-120 g brown sugar
  • 300-350 g dark chocolate
  • handful of brazil nuts
  • 70 ml port
  • ground cinnamon and cardamom seeds
  • zest of half a lemon
Plum and chocolate petit fours are a great addition to dessert. Cooking time 20 minutes.

Recipe for plum and chocolate petit fours

1. Cut the plums in half, remove the stones and cut the pulp into medium slices. Melt butter over medium heat, add plums and sauté for 2-3 minutes.

2. Add port wine, sugar and lemon zest. Reduce the heat and continue to cook, stirring, until all the sugar has melted.

3. In a mortar, grind cardamom seeds and cinnamon, add this spicy mixture at the very end of cooking. Stir. Remove from heat and keep warm.

4. Cut the chocolate into equal pieces and melt in a water bath or in a microwave.

5. Mix plums and chocolate. With a spoon, spread the mass in small slides on a silicone mat or on a dish covered with baking paper.

6. Coarsely chop the nuts and sprinkle on the petit fours. Refrigerate until completely solidified.
