Simple vegetable soup
Ingredients
  • 200 g broccoli
  • 250 g cauliflower
  • 2 slices wheat bread
  • 2-3 small carrots
  • 100 g cherry tomatoes
  • handful of spinach
  • 2-3 tbsp. l. olives
  • 5 st. l. olive oil
  • Juice of 1/4 lemon
  • Small bunch of green onions
  • Salt
  • Pepper
The menu for the time of Great Lent should humble not only the body, but also the soul. But in order for those who fast to be able to exist in the rhythm of a big city, they need something more than empty porridge. We took the traditional recipes of our grandmothers and remade them in a new way: soup, salad and hot dishes in such a reading will not allow you to be offended, but will give you strength to solve current affairs.

1. Boil water in a kettle. Separate broccoli and cauliflower into small florets. Cut the crust off the bread and tear the flesh into small pieces. Carrot cut into small slices.

2. Sauté broccoli, cauliflower, carrots and bread in olive oil in a deep saucepan, stirring occasionally, 3-4 minutes. Then pour 1 liter of boiling water from the kettle.

3. Reduce the fire to a minimum. Add tomatoes, spinach, olives, 2 tbsp. l. olive oil, lemon juice, salt, pepper and cook the soup for another 8-10 minutes.

4. Serve the soup with chopped green onions.
