Pizza with ricotta and baked vegetables
Ingredients
  • 1/2 eggplant
  • 1/2 zucchini
  • 1/4 red sweet pepper
  • 1/4 yellow sweet pepper
  • 400 g ready-made pizza dough
  • 100 g cooking tomato sauce
  • 100 g ricotta
  • 50 g mozzarella
  • 1/2 teaspoon dried oregano
  • Olive oil
  • Salt
  • Pepper
Pizza with ricotta and vegetables is prepared very quickly, but it turns out quite tasty.

Heat the oven to 240°C.

Cut eggplant and zucchini into thin circles, dip in olive oil, put on a baking sheet lined with parchment and bake for 10 minutes.

Sweet pepper cut into thin strips and fry for 10 minutes in a frying pan, greased with olive oil.

Cut mozzarella into small cubes.

Roll out the pizza dough on a baking sheet lined with parchment. Lubricate the dough with tomato sauce, not reaching 2 cm from the edge.

Put the baked vegetables and mozzarella on the greased dough, put the mashed ricotta on top. Sprinkle the pizza with dried oregano, lightly salt and pepper and bake for 10 minutes.
