Cookies with cranberries
Bakery
- 180 g wheat flour
- 1/4 teaspoon salt
- 1/2 teaspoon baking powder for dough
- 170 g softened butter
- 200 g brown sugar
- 1 egg
- 125 ml liquid honey
- 220 g oatmeal
- 80 g coconut flakes
- 60 g dried cranberries
- 50 g chopped pecans
Cranberry Cookie Recipe
Heat the oven up to 180°C. Line a baking sheet with parchment.
Sift flour into a deep bowl, also sift baking powder and salt. Now you need to take the softened butter and grind it in a separate bowl along with brown sugar into a fluffy foamy mass.
Drive an egg into the oil mass, add honey and mix everything until a homogeneous mass is obtained. Now add the sifted flour with salt and baking powder in small portions, mix in oatmeal, add coconut, chopped nuts, dried cranberries and mix until a smooth dough is obtained.
Using a tablespoon, place small circles of dough on a baking sheet lined with parchment at a distance of 5 cm from each other.
Bake cookies 12 minutes. Serve with cold drinks or tea. It is also good to combine cookies with light fruit salads.
