Pasta with beans and turkey
Ingredients
  • 200 g fine pasta (ditalini)
  • 400 g (1 can) canned white beans
  • 350 g turkey fillet
  • 400 g tomatoes, canned in their own juice
  • 4 tbsp. l. grated parmesan
  • 3 garlic cloves
  • 1 tsp dried oregano
  • Extra virgin olive oil
  • Salt
  • Freshly ground black pepper
This dish can easily be turned into a lean dish - just leave out the turkey fillet and cheese. It will also be very tasty and nutritious.

Drain the beans in a colander and rinse. Peel the garlic and chop finely. Cut the turkey fillet into small pieces.

Heat a frying pan with olive oil and sauté the garlic and turkey, 7 minutes.

Remove the skin from the tomatoes, chop the pulp in a blender. Add the tomatoes to the pan and simmer for 5 minutes.

Add beans and oregano to skillet, cook 5-7 minutes, season with salt and pepper.

Boil 2 liters of water in a saucepan and season with salt. Add pasta and cook according to package instructions.

Drain the pasta in a colander and transfer to the skillet with the sauce. Stir and heat together, 2-3 minutes. Divide the dish among plates and sprinkle with parmesan. Serve immediately.
