Vegetable stew with eggplant
Ingredients
  • Onion - 2 pcs.
  • Medium-sized carrots - 1 pc.
  • Medium-sized eggplant - 2 pcs.
  • Sweet pepper - 2 pcs.
  • Tomatoes - 2 pcs.
  • Greens - 1 bunch
  • Garlic - 1 head
  • Ground black pepper - to taste
  • Ground bay leaf - to taste
  • Salt - to taste
  • Oil for frying - as needed
Vegetable stew with eggplant is one of my favorite dishes. 

Recipe for vegetable stew with eggplant

Turn on the stove at a temperature above medium and put a frying pan with oil to heat up.

Peel the carrots, cut into cubes and pour into a preheated pan. Stir regularly.

Peel the onion, cut into cubes, add to the carrots, mix.

While the onions and carrots are cooking, wash the eggplant and cut into cubes, add to the onion, mix. Stir regularly.

Peppers wash, peel, crumble into cubes, add to vegetables.

Wash the tomatoes, cut into cubes, add to the vegetables, mix everything.

Peel the garlic, crush with the flat side of a knife, finely chop.

Wash the greens, chop, add to the vegetables and mix everything.

Sprinkle vegetables with garlic, pepper, bay leaf, salt, mix and remove from heat.
