Olive paste with roasted garlic

Ingredients
- 0.75 cup pitted Kalamata olives
- 1/2 cup pitted green olives
- 1/2 cup black olives
- 1 head of garlic
- 2 shallots
- 1.5 cups olive oil
- 1 teaspoon lemon juice
- 1 st. a spoonful of grated parmesan
Very tasty olive paste, perfect for sandwiches.
Recipe for Olive Pasta with Roasted Garlic

Peel the onion, cut off the top of the garlic so that the cloves open slightly.

Lightly grease the onion, season the garlic with olive oil, wrap it in foil and send it to the oven heated to 200 degrees for baking for 40 minutes.

When the garlic is ready and cool, free it from the peel.

Combine onion, garlic and black olives and immerse in a blender bowl and grind until smooth.

Next, add kalamata olives, green olives, cheese, freshly squeezed lemon juice, olive oil to the finished mass and continue blending until you get a paste of the desired consistency.

Add salt and pepper to taste.
