Fried salmon fritters with potatoes
Ingredients
  • 450 g braised fresh salmon, skinless and boneless, finely chopped
  • 3/4 cup cooked mashed potatoes
  • 1.5 cups olive oil
  • 1/4 cup heavy cream
  • 1/2 st. l. fresh lemon juice
  • Salt and freshly ground black pepper to taste
  • 2 tbsp. l. unsalted butter
  • 1/3 cup water
  • 1/2 cup wheat flour
  • 2 eggs
  • 3 garlic cloves, minced
  • Vegetable oil for frying
Bright spring pancakes will be a great snack for any occasion.

Mix garlic and salmon in a blender.

Add potatoes and continue to mix while adding oil until mashed.

Add cream, juice, stir.

Season with salt, pepper.

Mix butter with water and bring to a boil.

When the mixture boils, add the flour and mix - you will get a dough. Continue stirring for 1 more minute, then remove from heat and let stand 5 minutes.

Mix the dough in a blender with eggs. It must become uniform. Then add 1/2 cup fish mixture and mix until smooth.

Heat 85 g of oil in a fryer to 190 degrees.

Use two teaspoons to form balls of the dough and drop into the oil.

Fry 6-8 pancakes at a time, until golden brown.

Remove the pancakes with a slotted spoon and place on a paper towel.

Serve warm.
