Gentle pumpkin puree soup with ginger
Ingredients
  • 600 g pumpkin pulp
  • 1 carrot
  • 2 potatoes
  • 1 small onion
  • 1 apple
  • 3 medium pieces of ginger root
  • 1 tsp ground coriander
  • 1 glass of milk
  • 5 glasses of water
  • Salt
  • Greenery

Saute diced carrots, potatoes and onions in olive oil. Add coriander, stir.

Pour the vegetables with water, let it boil and leave on low heat.

Peel the ginger and grate it on a fine grater. Finely chop the apple.

Add ginger and apple to vegetable broth.

After 5-10 minutes, pour in a glass of milk, salt to taste and let it boil for 20-25 minutes.

Let the soup cool slightly and blend in a blender until smooth.

Serve warm, garnished with finely chopped herbs.
