Goat cheese mousse with tangerines

- 250 ml cream (38%)
- 150 g soft goat cheese
- 50 ml regular or goat milk
- 5 g gelatin (preferably in plates)
- 60 g fresh oatmeal cookies
- 4 tangerines
- 90 g sugar
- 2 sprigs of mint for garnish
Recipe for goat cheese mousse with tangerines
1. Soak gelatin in cold water for 10-15 minutes in advance.
2. Cut the peel off the tangerines, then cut the flesh into circles or slices.
3. Slightly warm the milk. Add squeezed gelatin to it, mix well and set aside.
4. Mix the cream with sugar, beat with a mixer into an airy fluffy mass. Add soft goat cheese and milk-gelatin mixture to the cream. Mix well and put the mass in the freezer for 5 minutes.
5. Break the oatmeal cookies into small pieces or crush in a mortar.
6. As soon as the mousse hardens slightly, sprinkle it with cookie crumbs, garnish with tangerine slices and mint leaves.
You can add tangerines boiled in syrup to the mousse.
First, prepare the syrup: mix 150 g of sugar and 150 ml of water, cook over high heat for 8-10 minutes. Cut the tangerines into quarters, reduce the heat to a minimum and place the tangerines in the syrup. Boil for 40-50 minutes.
