Mussels with cheese
Ingredients
  • 400 g large mussels (kiwi)
  • 4 tbsp. l. coarsely ground crackers
  • 1 small sweet red pepper
  • 1 lemon
  • 5 sprigs thyme
  • 5 st. l. olive oil
  • 200 g hard spicy cheese (Parmesan, Gruyère)
  • Salt
  • 350 ml cream (11%)
  • 50 ml dry white wine
  • 2 shallots
  • Olive oil for frying
  • Salt
Eating mussels is clearly associated with a vacation by the sea, for someone - Black, for someone - the Mediterranean. They learned to serve shellfish with cheese sauce wherever they can be caught. We will leave the beef with spinach for the quietest family dinners, and the mousse with tangerine is not ashamed to be served even to unexpected guests.

Recipe for mussels with cheese crust

1. Mix crackers with finely grated cheese, finely chopped pepper, thyme leaves.

2. Remove the beards from the mussels, put them on a baking sheet covered with parchment, lightly sprinkle with salt. Drizzle with lemon juice, drizzle with olive oil and sprinkle with cheese breading.

3. Bake in a preheated oven at 200°C for 12 minutes until the cheese is melted and golden brown.

4. In the meantime, prepare the sauce. Finely chop the shallot, fry in olive oil until translucent. Pour in the wine, reduce it by half, add the cream, bring the sauce to a boil and simmer for 2-3 minutes. Then salt and remove from heat.

5. Sprinkle the mussels with grated cheese and serve with the sauce.
