Onion marmalade

                Ingredients
            
- 1 kg white onion
- 40 g sea salt
- 1 cinnamon stick
- ½ tsp cumin
- 4 cloves
- 1 kg sugar
- 600 ml inexpensive balsamic vinegar
- 200 ml apple cider vinegar
            Sometimes one spectacular touch can transform familiar dishes beyond recognition. If you serve fish or meat, cheese or salad with this unusual caramel-spicy marmalade, you simply won’t recognize them. Like an old friend who tried on a haute couture dress.

Chop the onion, add salt, mix, leave for 5 hours.

Rinse the onion under cold water and pat dry with paper towels.

In a saucepan, combine two types of vinegar along with spices and bring to a boil. Reduce heat and add sugar. When the sugar is completely dissolved, strain the syrup and pour over the onions.

Place the saucepan with the onion over low heat. Simmer until the onion is translucent and the syrup is dark and thick (about 1 hour).

            Arrange hot marmalade in jars, cool and put in the refrigerator.
