Moroccan salted lemons
Ingredients
  • 8 lemons
  • 10 tsp salt
  • 3/4 tsp ground cardamom
  • 3 tsp ground coriander
  • 2 tsp freshly ground pepper
  • 2 tsp fennel
  • 1 bay leaf
  • pinch of cinnamon
In the city of Menton, which is located between Italy and Monaco, every year at the end of February a festival dedicated to lemons is held. Fantastic palaces and castles, fairy-tale characters, trees, entire edible gardens of lemons, oranges and grapefruits “grow” on the streets. Everyone can try new varieties of citrus fruits, drinks and sweets made from "sunny" fruits.

On the lemon, make a longitudinal cut, but not completely. Then turn the fruit over and make another similar cut, not completely.

Put 1 tsp in each incision. salt and spices.

Then pack the lemons tightly in a sterilized jar.

Sprinkle with salt (2 tsp.) Seal the jar of lemons tightly and place in a dark place.

After three days, open the jar, press the lemons, compacting them as much as possible - the released juice should completely cover the fruits. If not, add more lemon juice.

Close the jar of lemons again.
