Tortillas with beans
Ingredients
  • 4 cups flour
  • 2 cups of yogurt
  • 2 eggs
  • 500 g boiled white beans
  • 1/2 cup bean broth
  • 100 g melted butter or lard
  • 1 tsp dried savory
  • Salt
  • Freshly ground black pepper
  • Butter
Delicious and nutritious tortillas with beans. Cooking time is no more than 1 hour.

Mix eggs with yogurt. In a large bowl, sift 3 cups flour and 1/2 tsp. salt and pour in the yogurt with eggs. Knead a soft dough, adding the remaining flour. Roll the dough into a ball and place in a bowl. Cover with a towel and leave for 30 minutes.

Mash beans or pass through a meat grinder. You should get a not very thick mass, if necessary, add a little bean broth. Pour in the savory, salt well and pepper a little. Melt ghee or pork fat, add to the beans, mix well.

Divide the dough into 4 pieces and roll into balls. Divide the bean filling in the same way and roll into balls - they should be approximately equal in volume to the dough balls.

Roll out the dough into small cakes. Place a ball of filling in the center of each. Lift the edges of the tortilla up and pinch well so that the filling is completely covered.

Turn the resulting workpiece seam down and roll into a circle 5-7 mm thick, the size of the pan in which you will bake.

Heat a heavy, preferably cast iron skillet over high heat. Place the tortilla in the pan and fry until golden brown on both sides. Remove the finished cake from the pan and immediately brush generously with butter.
