Chicken breast in spaghetti pesto

- chicken fillet - 4 pcs.;
- spaghetti - 400 g;
- garlic cloves - 2 pcs.;
- basil - 1 bunch;
- pine nuts - 100 g;
- parmesan cheese - 40 g;
- olive oil - ½ tbsp.;
- salt, pepper - to taste.
Recipe for chicken breast in pesto with spaghetti
The first thing you need to do is prepare the pesto sauce. To do this, fry the pine nuts in a hot and dry frying pan for about 3 minutes. The cheese must be grated on a fine grater, and the basil and garlic must be washed and dried. Next, you must chop the basil and garlic in a blender, then add salt, pepper, half of the grated cheese and 2/3 of the roasted nuts, as well as half of the olive oil to them. Blend it all in a blender until it becomes a paste.
Season the meat with salt and pepper and sear until nicely browned, about 2 minutes per side. Then brush each piece with pesto. Place in a baking dish and place in a preheated oven at 200°C. The meat should be baked in the oven for 10 minutes.
While the chicken is baking, cook the spaghetti according to package instructions. Put the finished pasta on a plate. Cut the fillet into beautiful, even slices and place them on top of the pasta. Serve the finished dish, sprinkling it on top with the remaining pine nuts and grated cheese.
