Chicken baked with vegetables

- chicken drumstick - 800 g;
- vegetable oil - 30 ml;
- salt - 1 tsp;
- red tomatoes - 200 g;
- red paprika - 1 pc.;
- sweet yellow pepper - 1 pc.;
- onion - 100 g;
- rosemary - 3 sprigs;
- garlic cloves - 3 pcs.;
- ground black pepper - ¼ tsp;
- cherry tomatoes - 200 g.
Recipe for chicken baked with vegetables
Take the chicken, salt it. Preheat the pan and fry the chicken drumsticks in it until a pleasant golden crust. When the chicken is browned, transfer it to a deep and wide baking dish.
Next, you can work on vegetables. Wash them and dry them, and then cut them: tomatoes - into cubes; divide the pepper into 2 parts and cut - one part into cubes and the other not into wide strips. Finely chop the onion, garlic and rosemary. Salt and pepper all vegetables to taste.
In the pan where you fried the chicken, put the onion and fry it. Until it becomes transparent. Then add the tomatoes and diced peppers to the onion, mix thoroughly. Cook the resulting mixture over high heat for about 5 minutes, stirring constantly. At the end, add garlic and rosemary to the sauce, mix again.
You should pour the finished sauce over the chicken, and put the pepper cut into strips and cherry tomatoes on top of the sauce. Next, the dish should be baked in the oven at a temperature of 200 ° C for 15 minutes. The oven must be preheated.
