Chicken in tomato-rosemary sauce
Ingredients
  • Six boneless chicken thighs
  • 400 grams of peeled and chopped tomatoes
  • Two anchovy fillets
  • One large red onion
  • One small head of garlic
  •  Three tablespoons of olive oil
  • 75 ml red stock or wine
  • One tablespoon of capers
  • One teaspoon of oregano
  • Two or three sprigs of fresh rosemary
  • Salt and pepper to taste

First, preheat the oven to 190 degrees.

Finely chop the garlic, onion, heat the oil in a frying pan and fry the garlic and onion until half cooked. Then add chicken pieces and fry until golden brown.

We take a refractory form and put the chicken with vegetables into it, add wine, capers, chopped anchovies, tomatoes, herbs, spices and bake in the oven for 30-40 minutes. Chicken in tomato-rosemary sauce served with potatoes, couscous or rice.
