Chicken with vegetables and spices
Ingredients
  • Chicken fillet - 4 pcs.
  • Pepper - 2 pcs.
  • Eggplant - 1 pc.
  • Garlic - 2 cloves
  • A little fresh rosemary
  • Honey - 1 tbsp.
  • Pitted black olives - 20 pcs.
  • Balsamic vinegar
  • Penne pasta - 80 gr. per serving
  • Olive oil - 1 tbsp.
  • Salt
  • Pepper
We are used to cooking everyday dishes from chicken, it would be time to cook something really worthwhile. We offer you a chicken recipe with vegetables and spices, it turns out just “you will lick your fingers”.

Preheat the oven to 220 degrees.

Soak the eggplant in highly salted water to get rid of the bitterness.

Grind yellow and red peppers, after soaking (5-10 min.), Grind the eggplant in the same way. Crush or mince a clove of garlic and add to vegetables.

Put all the vegetables in a dish, add some fresh rosemary and oil. Salt and pepper to taste. Roast vegetables for 20 minutes.

Mix 1 crushed garlic clove with honey and vinegar. Coat the chicken with the mixture.

Put the chicken to the vegetables for 10 minutes until ready.

Prepare pasta. Remove the chicken and vegetables from the oven and stir in the pasta.

Divide the chicken breasts into pieces and arrange them along with the vegetables on top of the pasta.

Cut the olives into 2 parts and decorate our dish. From above it is also recommended to sprinkle everything with basil and fresh herbs.
