Liver croquettes
Ingredients
  • 300 grams of chicken liver
  • 60 grams smoked brisket
  • 3 medium potatoes
  • 3 slices white bread or loaf
  • 2 chicken eggs
  • 3 tablespoons flour
  • 6 tablespoons vegetable oil
  • 1 cup breadcrumbs
  • Salt and ground pepper to taste
Liver croquettes can be used as an independent dish, if served with any side dish or as an appetizer.

First, prepare the liver. Rinse it under running water and put in a suitable saucepan with a little water. Bring to a boil and boil for no more than 5 minutes. It is not necessary to salt the liver. Wash the potatoes well and boil them in their uniforms. Prepare the bread by pouring it in a bowl with milk.

Next, proceed to the preparation of minced meat. Grind the boiled liver with a meat grinder, send the brisket and peeled potatoes there. Squeeze the bread slightly from the milk and also scroll in a meat grinder. Next, add 1 egg to the prepared minced meat, season with salt and pepper, mix everything thoroughly until a mass of a homogeneous consistency is formed.

Now you can start forming croquettes from cooked minced meat. Prepare 3 suitable cups. In one, beat the egg until foamy, place the flour in the other, breadcrumbs in the third. With wet hands, take a small amount of minced meat and form a small ball out of it, first roll it in flour, then in an egg and finally in breadcrumbs. Thus, we form all the croquettes and fry them in a pan with hot vegetable oil until an appetizing golden crust is formed.

The resulting dish can be served as an appetizer. Or serve as an independent full-fledged dish with any side dish of vegetables or cereals.
