Shrimps with tropical salsa
Ingredients
  • 1 kg large raw shrimp
  • 80 g butter
  • 2 tbsp. l. lemon juice
  • 1/2 tsp lemon peel
  • 2 cm ginger root
  • Salt
  • 1 kiwi
  • 2 pineapple rings
  • half mango
  • 1 small red onion
  • Half a red chili pepper
  • 5 sprigs of cilantro
  • 1 st. l. lime juice
  • 1 tsp brown sugar
  • 2 tbsp. l. vegetable oil
When you want food to be light, fast and bright, tropical dishes will come in handy. Seafood and fruits - this is a real summer combination, they know for sure in the tropics.

Peel the kiwi, mango and onion. Cut fruit into small cubes. Chop the onion and chili very finely. Finely chop the cilantro leaves. Mix vegetables and fruits in a bowl, season with lime juice, sugar. Cover with cling film and leave for 2 hours.

Soak wooden skewers in cold water for 1 hour. Remove shells from shrimp, leaving tails. Cut the back of the shrimp and remove the intestinal vein. Place the cleaned shrimp in a bowl.

Peel and finely chop the ginger. Melt butter and cool slightly. Mix with ginger, lemon juice and zest, salt. Pour shrimp with spiced oil and leave for 10-15 minutes. Arrange salsa on a platter. Thread the shrimp onto skewers and grill over hot coals for 1 minute. from each side. Place cooked shrimp over salsa and serve immediately.
