Ingredients
  • 300 gr. chanterelles
  • 1 white part of a leek
  • 1-2 garlic cloves
  • 2-3 potatoes
  • 20 gr. butter
  • 150 gr. cream
  • 300 ml milk
  • 350 ml vegetable broth
  • 50 ml olive oil
  • Pepper
  • Salt
  • truffle oil
  • Crackers
  • Greenery

Recipe for cream soup with chanterelles

We take a thick-bottomed pan and heat the mixture of oils in it.

Chop the onion and garlic and fry for a couple of minutes over medium heat. Add peeled and chopped potatoes. Simmer for 5 minutes.

Now add chanterelles to the pan and continue to simmer for another 2 minutes. Salt and pepper to taste.

Add vegetable broth so that it completely hides all the vegetables. Bring the liquid to a boil and wait 5 minutes.

Now grind the vegetables in a blender and add milk to them. Now we wait for the mixture to boil again, reduce the heat to a minimum and add cream to the pan.

We keep our cream soup with chanterelles for a few more minutes on low heat, after which we pour it into plates and serve with herbs and garlic croutons.
